Its name comes from Xalapa, in Mexico and is part of the Capsicum annuum genus. It is perhaps the most well-known chili pepper variety across the world thanks to the Mexican cuisine, although other cultures have also adopted its use.
This variety has low pungency with around 4000 SHU (Scoville scale), in comparison with the 300.000 SHU of Habanero.
We market our products mashed, naturally fermented and preserved in salt. According to client requirements we can add a percentage of vinegar and can also mix it with other varieties of our products to reach particular flavors. There are no chemical additives or flavorings. Shelf life is 24 months.
